1.30pm - Jim Manolios
Jim Manolios, owner of Trofeo Estate, (Dromana) will discuss using the ancient process involving terracotta amphora. Trofeo Estate is the largest producer of Amphora wine in the Southern Hemisphere. All of their wines are exclusively Estate grown and made using handcrafted Italian terracotta amphorae, instead of oak barrels, which is an ancient winemaking method dating back approximately 6,000 years. The use of amphora, along with organic and biodynamic farming/viticulture principles, promotes the true expression of the fruit from the vineyard.
